Cauliflower Mac + Cheese

This is a twist on the traditional mac + cheese using cauliflower to add your cheese sauce.

Ingredients:
  • 1 lb pipe rigate pasta
  • 1 medium cauliflower, chopped
  • 1/2 tsp seasoning blend
  • 1 tsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/2 medium red onion, diced
  • 2 tbsp flour
  • 1 cup half + half
  • 1 cup veggie stock
  • 3 springs of thyme
  • 1 cup smoked white cheddar cheese, shredded
  • 1 cup smoke gouda, shredded
  • salt + pepper
  • 1 tbsp bread crumbs

Instructions:
  1. Preheat oven to 420°. Bring 6 of salted water to a boil in large pot.
  2. Add pasta and cook for 9 minutes or until al dente. Drain pasta.
  3. Toss cauliflower, seasoning blend, and oil together. Place on lined sheet pan. Roast for 20 minutes or until brown. Turn oven down to 350.
  4. In same large pot over medium heat, add oil, onions, and garlic. Sauté for 2-3 minutes until translucent.
  5. Add flour and cook for 1 minute.
  6. Add half + half, veggie, and thyme stock to pot. Add cheese in small portions to the liquid until it is melted. Salt and pepper to taste.
  7. Add roasted cauliflower to cheese mixture. Blend a third of the mixture in the blender and add back to pot.
  8. Add the pasta to the mixture and mix together. Place in casserole dish. Bake for 20 minutes or until brown.
