Kale + Brussels Sprout Salad

Makes: 6 -8 servings

Ingredients:
  • 1 bunch Lacinato or curly kale, ribs removed thinly sliced
  • 1 lb brussels sprouts, thinly sliced
  • 1/2 cup sliced almonds
  • 1/4 cup dijon mustard
  • 1/4 cup lemon juice
  • 2 garlic cloves, minced
  • 1 small shallot, diced
  • 1/2 cup asiago cheese, shredded
  • salt + pepper

    Instructions:
    1. In a small pan over low-medium heat, toast the almonds until slightly brown.
    2. Combine kale and brussels sprouts in a large bowl.
    3. Combine mustard, oil, lemon juice, garlic, and shallots in a blender or food processor. Add salt + pepper to taste.
    4. Divide mixture into 4 patties (approx. 1/4 cup) and place them on wax paper. Freeze burgers at least for 30 minutes before cooking.
    5. Add cheese + toasted almonds to greens. Toss with dressing.
