Balsamic Glazed Acorn Squash

Everyone says that it's pumpkin season but it's more like squash season.  Pumpkin is not the only squash out there this season, so let's get into the acorn squash.  Roasting is one of my favorite things to do in the fall, it helps bring out the sweetness.  Roasting this acorn squash is no different. 

Balsamic Glazed Acorn Squash

This tangy but sweet side can be served with any fall dish.

Makes: About 4 servings

Ingredients:
  • 1 acorn sqashed, seeded, cut in half moons
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon light brown sugar
  • 1 tablesppon grapeseed oil
  • 2/3 cups balsamic vinegar
  • 1 tablespoon light brown sugar

    Instructions:
    1. Preheat oven to 420 degrees. Place sheet pan covered in foil in the overn while it preheats.
    2. Mix salt, parika, and brown sugar together in a small bowl.
    3. Place squash in medium sized bowl. Toss squash with seasoning mix and oil.
    4. Place squash on hot sheet pan. Roast in the oven for about 20 minutes. Turn half way during cooking process.
    5. While squash is roasting, place vinegar and brown sugar in small sauce pan. Reduce by half on low heat. Glazed should coat a spoon.
    6. Serve squash on serving dish and drizzle balsamic glaze.
  • Kitchen Hacks:

    Putting sheet pan in oven while it preheats helps to get your food crispy and brown.
