Holidays bring about togetherness, good times, and FOOD. To be honest there is an overload of food during this time since everyone is throwing some type of get together. If you are throwing the party this year, keep in mind that there will be tons of parties going on so keep the food light but filling.
Instead of going for heavy food that may weigh your guests down, go for foods that are light but filling. You will be providing your guests with some filling eats that won’t put them in a food coma. Here are some healthy seasonal foods that you can use in your dishes this holiday that won’t deprive you of flavor:
Cauliflower is a good substitute for your carbs – those holiday favorites such as potatoes, rice, or dough. It resembles the look of broccoli but just white in color due to lack of chlorophyll (the property turns are food green). Cauliflower is a good source of Vitamin C, folacin, boron, and potassium.
Subbing out cauliflower for potatoes for your party will remove some of the heavy food feel that you sometimes get with holiday parties. The idea for any party is to keep your guests full but not to the point everyone is in a food coma. LOL
Here are some ways you can add cauliflower to your menu:
- Swap mashed potatoes for mashed cauliflower – Add some roasted garlic – YUM
- Swap pizza dough for cauliflower pizza dough
- Swap rice for riced cauliflower
- Buffalo cauliflower bites – with a side of blue cheese
- Cauliflower steaks
- Roast it and add it to a salad
Squash is another good carb substitute as well. Some shapes of the squash can even be used as bowls to serve your food.
You can use winter squash in the following ways:
- Soup shooters (nice presentation)
- Roast it – add to a nice winter salad
- Stuff it
Darker Leafy Greens
If you want to get the most from your salad greens in the winter, choose greens from the chicory family such as Belgian endive, curly endive, escarole, and radicchio which are an excellent source of vitamin A, potassium, and calcium.
Leafy greens such as kale, collard greens, swiss chard and turnip greens are rich in beta-carotene, vitamin C and other properties that fight against cancer. They are a good source of fiber, minerals, and calcium (just about the same amount as cows milk).
You can make some of the following dishes with these greens:
- Winter Salad – add some of the citrus fruit listed below
Nothing like good ‘ole winter citrus to help you combat the winter weather and it is peak season during the winter months. Tangerines, navel oranges, clementines, grapefruit, and tangelos are high in vitamin C, phytonutrients, fiber, potassium and cancer-fighting properties.
Of course, you can make amazing drinks from these fruits but you can also use citrus for:
- Vinaigrette for a salad
- Toppings for a salad – fresh, dried or candied
The alternatives will not only be better than your normal holiday party food but it will keep you in-season. When you eat in-season it gives your body that added protection it needs during the winter season.
